THE MOST RECOGNIZED PERUVIAN CHEFS OF OUR ERA



From national to international, peruvian chefs has put peruvian food on the highest level of culinary art. Gastón Acurio, Virgilio Martínez, Mitsuharu Tsumura y Pia Leon, are one of the best representation of our culture through our cuisine. 

GASTÓN ACURIO

Was born in Lima 1967. Gastón Acurio owns more than 40 restaurants in 12 countries around the world. The most famous one is "Astrid y Gaston".

Gaston has always seen peruvian food as an opportunity to break the false image of Peru that people around the world had. Peru was only known for its archaeological sites or its raw materials like cotton. 

With him, local and regional cuisine started to be seen with new eyes. It also started to become more famous Mistura, the most recognized national gastronomy fair around world.

The impact of Gaston in the diffusion of our gastronomy is immeasurable. 

VIRGILIO MARTINEZ

Was born in Lima in 1977. Virgilio is a peruvian chef and owner of Central restaurant, chosen as the second best restaurant in the world and the best of South America in 2022 edition by The World´s 50 Best Restaurants.


His cuisine is based on the investigation and research of different ecosystems of the country. His dishes celebrates uniques sceneries, history and traditions of his native land.

MITSUHARU TSUMURA

Was born in Lima in 1981. Tsumura stuided in the United States and then lived in Japan. He used this knowledge and combined it with his peruvian roots to create MAIDO, one of the best restaurants in Latin America since 2017 with Nikkei cuisine.

PIA LEON

Was born in Lima in 1986. Pia was the winner of The World’s Best Female Chef Award 2021. The ceremony took place in Belgium.
León’s turning point came when she heard that a local chef was opening a promising new restaurant in Lima. Intrigued, she arranged an interview and landed a job at the fledging Central in 2009 to work the cold station. Within five years, she had gone from being the only female cook in the kitchen to its head chef – the right hand of chef-owner Virgilio Martínez.


Unique in its philosophy to research and serve Peru’s outstanding biodiversity on the plate, Central quickly grew into one of the world’s most celebrated restaurants. In 2014, León was at Martínez’s side when Central won the title of The Best Restaurant in Latin America for the first time, an honour it retained for the next two years, along with regular appearances in the upper echelons of The World’s 50 Best Restaurants lists.
In 2018, the chef took her rightful place in the spotlight with the opening of her own restaurant, Kjolle, also in Lima.
